BREAKFAST TOSTADAS 

SERVES 4

 

INGREDIENTS

1/4 cup 1% low-fat milk
1/2 tsp salt
1/4 tsp pepper
4 large egg whites
2 large eggs
4 (6-inch) corn tortillas
1/2 cup shredded low-fat cheddar cheese
1/2 cup canned black beans (rinsed and drained)
1/2 cup canned corn (drained)
1 cup salsa

 

INSTRUCTIONS

Combine first 5 ingredients in a large microwave-safe dish, stirring with a whisk. Microwave on high for 3 minutes; stir. Microwave another minute if not done. Arrange one tortilla on each of 4 microwave-safe plates. Divide egg mixture among the tortillas.

Layer the cheese, beans, corn evenly over the 4 plates. Microwave each for 30 seconds.

Top each tostada with salsa. Serve.
